Pro Tip (How To):   To use the cheese cutting knife effectively, timing is key.   You need to take your frozen flats of bait and let them slightly defrost until just the surface of the bait is soft.  You want the flat to remain frozen together.   The knife should be able to easily enter just the top baits about 1/2".  Place the flat on the ground or sturdy surface and use the double handle knife to cut the bait into 1-1/2" strips, the irregularity of the bait being frozen will result in random chunks.    If you do it correctly the Flat can be wrapped back up or broken up and stored in a bucket until use.   Now you are ready for a night of chunking.
